Daily Stuff 2-13-13 Parentalia

Hi, folks!

valentine 1Just so you know, the shop is only going to be open from 1-4pm on Thursday. It’s Valentine’s Day, my birthday and Tempus and my 25th year of being married, so we’re doing a vows renewal at the Little Log Church in Yachats in the evening. Early in the day we’re going to have a birthday lunch, so…short hours.

weather rain showerThe weather outside is dim grey and drippy, nothing new, except for the fact that we’re in the cloud layer, so it’s quite foggy.

Tempus got the feeder back up, and it’s full again, so the birdies are happy. They’ve had food, just not in the feeder. There’s a sparrow out there right now.

I fought the computer for most of an hour trying to get all the newsletter pointers up and after I was able to, restarted it…which then took another chunk of time. Tempus and I had some of the “Old Apple Soup” for breakfast and he made some lovely breakfast sausages to go with it. I took a short nap after that and then Tempus and I sat down to make a shopping list. He finally headed out around 2pm and I worked on newsletter stuff for the rest of the afternoon, occasionally taking a break to drool over the outfits on the Facebook Elizabethan Costume group…and chatting with various friends.

I finally got going on Ostara info for the newsletter around 7pm. Tempus got back 8-ish and we were pretty busy for a while, putting things away and making some supper. The Ostara stuff finally got finished around 11pm, so I found a book and crawled into bed with it.

product earring Z Ster Amb 36…and then couldn’t sleep. I don’t know why, but I didn’t finally completely drop off until past 4am, so I was late getting up this morning. Some of it was that the writing bug got me again, and I’m working out another story that I’m probably going to have to take the time to work on today.

We still have chores to do and the Wicca 202 class is this afternoon and I still want to make borscht and brownies. …and I still have stuff to do on the newsletter.

“Temples were closed and weddings prohibited during the Parentalia, ancient Rome’s main festival of the dead, which lasted until the Feralia (February 21).
It was customary for people to visit the graves of their parents and other relatives, placing offerings of wine, milk, oil, honey and water from springs. Also laid at the graves were sacrificial blood from the bodies of black animals. Mourners decorated the graves with roses and violets, then partook of a ritual meal at the graveside.
The mourners greeted each other with the words, Salve, sancte parens, “Hail, holy ancestor”.
Today was a day for the famed Vestal Virgins to perform a special ritual, in honour of their sacred ancestor, when they visited the cult’s parental shrine which was sacred to the early Vestal, Terpeia.

The red berries were historically used to lure birds into traps, and the specific epithet aucuparia comes from words meaning “to catch a bird”. Birds are also responsible for dispersing the seeds. Rowans thrive in poor soils and colonize disturbed areas. In some parts of Europe they are most common around ancient settlements, either because of their weedy nature or because they were planted. Rowans flower in May. They grow to 15 m (50 feet) and are members of the Rose family (Rosaceae). They are cultivated in North America, especially in the northeast.

These recipes are from a Russian language site, so the measurements are a little odd in format! If someone makes one of these and works the amounts out, let me know. I think “glasses” are cups, 8oz, iow. “Dough” is used interchangeably for both “dough” and “flour”. “Shred” means the same as “grate”. “Ceder” is “zest” or “peel”. The translation is a little rough, yet. I think “curd” in the nut cakes is ricotta-style cheese, and how the Turkish cakes are made is beyond me. It is typical to serve some of these, the various stuffed pancakes, on what we would call a “cake plate” and cut them into slices like a layer cakes.

Recipes for Blini and Pancakes
Blini are indispensable attribute of Maslenitsa. Also Blini are traditional Russian delicacy which takes a worthy place in cuisines of many nations of the world. From the pagan times blini were a symbol of the sun. People believed, that blini are eaten in honor of Spring, fertility of the ground.

Simple Pancakes
Dough – 2-5 glasses
Eggs – 4 to 5
Sugar – 100 g
Dairy Butter – 200 g
Milk – 3 to 4 glasses

For the simple thin pancakes the dough is prepared of dough, milk, eggs and salt. First thing you should do is separate the yolks from whites. Then stir the yolks with sugar slowly adding milk whilst stirring. Then add the salt and the melted hot butter. Then start adding the dough (very slowly), stirring the mixture and smoothing the dough nubbles. As the last step, add the stirred whites. Now everything is ready for baking pancakes on the hot frying pans.

Stuffed Pancakes
These are the burrito-like pancakes with stuffing like chopped eggs, mushrooms, chopped vegetables and the like. Thus, such pancakes are some sort of equivalent of doughnuts, or the ancestors of a closed pizza.

They are baked in the following way. Take a frying pan, butter it down with a dairy butter and pour on it the ready dough, but a bit less than usual. When half ready, put the stuffing onto the pancake and pour the new portion of dough above it so that the stuffing be completely covered with it. Then turn the pancake and bake until ready.

Cottage Cheese Pancakes
Dough – 2-5 glasses
Eggs – 5
Sugar – 100 g
Dairy Butter – 200 g
Milk – 3 glasses
Salt – 3/4 spoons per person
Cheese – 300 g

Shred the cheese on the shredder. Separate the yolks from whites. Stir the yolks with milk. Add to this mixture the shredded cheese, dough and salt. Stir the whites and add the whites froth to the dough. Bake on dairy butter until formation of crust. The ready pancakes should not be too big.

Potato Pancakes
Flour – 1-5 glasses
Eggs – 2
Sugar – 100 g
Dairy Butter – 200 g
Milk – 3 glasses
Potato – 400 g
Bulb Onion – 1 bulb
Salt and Red Pepper

Mix milk, eggs, dough and spices. Stir the dough and leave in a warm place for five minutes. Meanwhile, slice the onion, shred the potatoes on the shredder and then add them to the dough. These pancakes should not be too big. Bake them on a low flame on both sides until the formation of crust.

Nut Cakes
Curd – 250 g
Milk – 220 ml
Lemon – 1
Sugar Powder – 1-2 spoonfuls
Freshly Frozen Raspberry – 200 g
Whites – 2
Yolks – 2
Starch – 50 g
Ground Nuts – 3 teaspoonfuls
Sugar – 3 spoonfuls
Salt, vegetable oil

Mix the curd and two glasses of milk. Wash the lemon, shred the ceder on the shredder and add it to the curd. Squeeze the lemon juice into the mixture. Pour the sugar powder onto it. Unfreeze the raspberry. Stir the whites. Stir the dough from the starch, flour, ground nuts, yolks, salt and 200 g of milk. Carefully stir the mixture with the froth of whites. Bake the small pancakes on the dairy butter. Make the sandwiches of the pancakes putting the curd between the halves, put the raspberry on the top on the sandwiches and cover with the remaining pancakes.

Turkish Pancakes
Dough – 60 g [In this case, this does mean prepared dough, like pizza or pie dough]
White Sauce – 50 ml (this is milk flour gravy, very thick)
Eggs – 1
Vegetable oil – 10 g
Breadcrumbs – 10 g
Tomato Sauce – 50 g
Sugar – 1 teaspoonful

Warm the very viscous white sauce, mix it with the dairy curd and add some salt, pepper and make them into cigar shapes. Then roll the dough into a layer no more than 0,5 mm thick and slice it into checkers 5 to 7 сm long and moisten them. Place one doughnut on each checker and wrap. Dip these pancakes in the mixture of whites and yolks and bake them in a big quantity of vegetable oil. Serve with tomato sauce spiced with lemon juice and sugar.

Hungarian Pancakes
Flour – 1/2 glass
Eggs – 1
Sugar – 1 teaspoonful (for the dough) and 100 g (for the stuffing)
Milk – 1 glass (for the dough) and 1/4 glass for the stuffing)
Walnuts – 100 g
Raisins – 1 spoonful
Rum – 1 teaspoonful
Orange Cedar – 1 teaspoonful
Dairy Butter – 50 g

The chocolate gravy
Chocolate – 50 g
Coco Powder – 25 g
Yolks – 2
Sugar – 75 g
Milk – 1/2 glass
Dairy Cream – 1/4 glass
Flour – 1 teaspoonful
Rum – 1 spoonful

Make the dough, eggs milk and sugar and bake the pancakes from this mixture. Make the puree from the ground walnuts with the milk, sugar and rum. Add the raisins and the orange ceder to the puree. Put the stuffing onto the pancakes, wrap and bake the pancakes on all sides on the dairy butter. Serve the pancakes with the chocolate gravy. For the gravy: mix the yolks with sugar and flour, add the milk and the dairy cream, warm close to the boiling point add chocolate, cocoa powder and rum.

Jewish Pancakes
Carrot – 2-3
Vegetable Oil – 2-3 spoonfuls
Eggs – 3
Salt, Pepper
Vegetable Oil for Baking
Sour Cream – 1 glass

Mix the eggs, salt and sugar. Add the flour and stir carefully. Continue pouring the milk very carefully and do not stop stirring. Add the vegetable oil and stir again. Throw some salt onto the frying pan before warming.

The Stuffing: shred the washed and peeled carrots on the shredder, fry on the vegetable oil add the chopped eggs, put some salt, pepper stir carefully and let the mixture cool. Stuff the pancakes with the cooled mixture and bake on both sides on the frying pan. Serve with the dairy butter or the sour cream.

Red and Black Pancakes
Dough – 2 glasses
Milk – 3 glasses
Eggs – 1
Salt, sugar – ad gustum (to taste)
Soda – 1/4 spoon per person

These pancakes are baked thick and big. Each pancake is buttered with dairy butter and black and red caviar is put on top of it. Above it one more pancake is put and also black and red caviar is put on top of the second one. The whole “cake” should not be too thick, or multi-layered as it will not be convenient to slice it into pieces.
